
Chili Lime Rum Drizzle
Spicy, sweet, and punchy—perfect over crispy pompano.
1 garlic clove, grated or finely minced
Zest + juice of 2 limes
½ cup honey
1 tbsp sweet garlic chili sauce
1–2 tsp Frigate 21 (or other spiced Caribbean rum)
Instructions:
In a small saucepan over low heat, combine all ingredients. Simmer gently for 5–7 minutes, stirring occasionally until slightly reduced and aromatic. Let cool. Store covered; can be made 2 days ahead.
Lime Chili Dipping Juice
A tart, fiery dip for pieces of fried fish.
2 bird’s eye chilies (or substitute 1 tsp chili flakes)
Zest + juice of 4 limes
1 garlic clove, grated
Instructions:
Muddle chilies and garlic in a mortar or bowl. Add lime juice and zest. Let sit 15 minutes before serving. Serve at room temperature.
Garlic Herb Fish Rub
Bold and savory, perfect for whole pompano.
6 tbsp minced garlic
½ tsp freshly ground black pepper
1 tbsp sea salt
1 tsp dried oregano
2 tsp onion powder
4 tbsp Goya Adobo seasoning
½ tsp smoked paprika
Zest of 1 lime
Pinch cayenne pepper (optional for extra heat)
Instructions:
Mix all ingredients into a thick, fragrant paste. Use immediately or refrigerate for up to 3 days.

Fried Pompano
4–5 whole pompano, gutted, scaled, heads and fins removed
All-purpose flour (for dredging)
Salt & pepper (to season the flour)
Vegetable oil (for deep frying)
Instructions:
Prep the Fish:
Score each side of the cleaned pompano 5–6 times down to the rib cage.
Rub the garlic herb seasoning liberally inside the cavity and into each score line.
Cover and refrigerate 12–24 hours for maximum flavor.
Dredging & Frying:
Season flour with salt and pepper. Heat oil in a large deep pot or fryer to 375°F (190°C).
Dredge each fish thoroughly in the seasoned flour, shaking off excess.
Carefully lower into hot oil and fry 8–9 minutes, turning once, until deep golden and crispy.
Drain on a wire rack (not paper towels) to maintain crispness.
Caribbean Yellow Rice (Instapot Method)
2 family-size bags of yellow rice (about 4 cups total)
2 cloves garlic, minced
4 tbsp olive oil
2 x 32 oz cartons chicken stock (low-sodium)
Vegetables:
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
½ red onion, diced
Instructions:
Set Instant Pot to sauté. Heat olive oil, then add onion and cook until translucent (4–5 min).
Add bell peppers and cook another 4–5 minutes. Stir in garlic, cook 1–2 minutes until fragrant.
Add chicken stock and rice. Stir well.
Lock the lid and set the Instant Pot to Rice or Manual Pressure Cook for 12 minutes.
Allow natural release for 10 minutes, then fluff with a fork.
To Plate & Serve:
Spoon a generous mound of Caribbean yellow rice onto each plate.
Top with a whole crispy pompano.
Drizzle with warm chili lime rum glaze.
Serve lime chili dipping juice on the side for dunking or squeezing over the fish.
Optional Garnish: Fresh cilantro, lime wedges, thinly sliced scallions.
